What's YOUR favorite tri tip marinade recipe?
Italian salad dressing (I like Wishbone), garlic powder (not garlic salt), and fresh ground pepper. I've used this on tri-tip for 30 years and there's nothing I've tried that I like better. First, I use a fork to perforate the meat so that the marinade will get saturated very quickly, then I mix the marinade with the tri-tip in a zip lock bag and then press it into the meat through the bag. I let it come to room temp for about 20 minutes and it's good to go straight to the grill. I like this technique because it's so quick and you don't need to use a lot of marinade to get the flavor into the meat. Just enough marinade to coat the meat is all that's needed, and the proportions are easy to adjust for just one piece or a whole bag. The dressing already has a good balance of salt, and the garlic powder and pepper don't affect the salinity, so I use enough for the dressing to be more like liquid paste, so that it doesn't easily drip off on the grill.
